Geographical Situation : An exceptional soil, protected from the oceanic influences by mountain-mass, the hillsides of the Pfersigberg are exposed to the exceptionally sunny East-South East.
The Pfersigberg is the first choice place for Gewurztraminer.
Sol : The conglomerate subsoil is made of various chalky gravels, grey and very hard of the Muschelkalk (middle Trias) or yellowish and less resistant of the middle Jurassic.
The chalky soil belongs to the magnesia-calcic soils with high grade of limestone, thus of an alkaline pH between 7,7 and 8.
In this kind of chalky-limestone soils, the weak water-retention, the ground colour as well as the low moisture, favour an intense heat radiation, allowing a very early maturation of the grapes
Vinification : Manual harvesting, pneumatic pressing of whole
bunches, static cold decanting. Fermentation at
controlled temperature. Racking after fermentation,
blending of the different varieties and ageing on fine lees.
Color : Very brilliant golden yellow colour.
Nose : Candied fruits flavour and spiced aromas.
Mouth : On the palate, mixing grass forest aromas.
Recommendations : A very elegant aperitif wine, which could also be matched with foie gras. In dessert, its mellowness will enjoy your guests.
